Well, when it comes to cakes and desserts, the first thing that I look for is a red velvet cupcake or cake. I love eating red velvet cakes/ cupcakes especially if it's filled with a super yummy cream cheese filling.
When I had the chance to discover my baking skills (lol), I decided to recreate my favorite dessert. We didn't have the a standard oven but we had a microwave oven, where we can cook a cake. :D
For the red velvet cake:
1 cup Pancake Mix
1 egg
2 tbsp oil
1 tbsp cocoa
3/4 cup water
4 small drops (2 tsp) red food coloring
2 small drops (1 tsp) of vanilla extract
For the Cream cheese frosting:
4 ounce cream cheese spread
4 tbsp butter
3/4 cup powdered (confectioners') sugar
2 tsp vanilla extract
1 pack (250 ml) of All Purpose cream
1 pack (250 ml) of All Purpose cream
candy sprinkles for garnishing
Procedure:
- Beat the egg in a bowl until foamy. Add water and oil. Mix it thoroughly.
- Then add the pancake mix. Gradually add cocoa and mix it together until no lumps can be seen.
- Add red food coloring (amount above can be adjusted depending on the redness of the cake you want to achieve).
- Mix in the vanilla extract. Transfer to a baking pan (microwavable container , in my case) brushed with butter.
- Bake this in a pre-heated oven (350 degrees) for about 10-15 minutes.
- You can also bake this in a microwave oven for 2 minutes on a high setting.
- Once baked, allow to cool for around 15 minutes.
- In a medium bowl, place the cream cheese.
- Add butter gradually until it becomes blended.
- Mix in the all purpose cream.
- Mix in the confectioner's sugar and vanilla. Continue beating until mixture becomes smooth.
- Crumb the cake with a fork.
- Pour the frosting mixture on it and mix it together.
- Once everything is well combined, you can now form balls out of it.
- You can either use a scoop or form the balls by hand.
- You can create 13-15 balls out of the mixture. Once formed, garnish it with candy sprinkles.
